Now Accepting Zucchini Recipes



We have eaten zucchini for the last 5 days in a row and we went out and harvested this many more tonight. We started out with grilled zucchini with salt and pepper which is one of my favorites. Then we proceeded to raw zucchini with hummus, chicken and zucchini roast, and stuffed zucchini.Our dinner, potato and zucchini au gratin, is currently cooling as I write this. It has been suggested that when we get overrun with zucchinis to pick the blossoms and saute them up for a delicious change of pace.

How many more days can we eat zucchini in a row? Is there a Guinness World Record for this? I think we can start over with grilled zucchini one more night and then I am at a loss. Anyone have other favorite recipes to share?

  1. you can hide zucchini in brownies & cake & banana nut bread... but you don't need the sugar... hmmm....

    i have a recipe book called simply in season which gives your recipes for each season & zucchini is a big one. lmk if you want to take a look.

  2. Zucchini pancakes, yes and they are good! Just grate up one or two and add to your standard pancake mix, yummy.

  3. okay - how are you not getting squash vine borers on your squash plants?? I spent most of today picking off the eggs and digging the borers out of 5 of my plants. I won't let them win!! So, if you have any tips, they would be greatly appreciated!

  4. janet- just because i dont need sugar doesnt mean i wont be eating sugar. id love to see your book. ill trade you a zucchini for a look at it.

    randy- hmm zucchini pancakes...ill try anything once and i love pancakes- but i have doubts.

    suzanne- we plant different kinds of squash- apparently they like bush varieties more and you can plant one they can go to and eat. thats like a dummy squash. and/ or we have no idea.

  5. Zucchini bread is awesome and of course, says the girl in North Carolina, fried zucchini is amazing! Look up zucchini in the Joy of Cooking... since you have a copy laying around your house somewhere.

  6. I like the Spicy Mexican Zucchini Casserole from Allrecipes though I add about half the zucchini they recommend and shred the zucchini so basically hide it in the casserole. I also eat them like spaghetti. I saute them then smother them with spaghetti sauce and top with cheese. When I get tired of looking at them I shred them and freeze them and later add them to soups. It give the soups more body. They are also good in curries. And as the others say, you can't go wrong with zucchini bread.

  7. I grate it into 2 cup portions and freeze it for later use in the zucchini bread recipe. Around here, zucchini season is the only time people lock their cars:-D

  10. I like zucchini best in ratatuille (with eggplant, tomatoes, garlic, onions, etc). Shredding it and/or treating it like pasta sounds intriguing....

  11. Can you help me with zucchini blossom rot? I keep getting gorgeous zucchini that at about 3 or 4 inches long turn yellow...suggestions?
